Max Wetzels is back on base, and this young chef is silently continuing Cabillaud's high-quality cooking. This modern restaurant is located on the second floor of Theater De Maaspoort. A beautiful, spacious dining room with wooden floor and tables, comfortable fabric-covered armchairs, an elongated industrial-looking bar and gigantic high ceiling. The Scheuten roof terrace with partial views of the Meuse River has a nice Ibiza vibe. Max cooks classic cuisine with international influences using local ingredients. We enjoy a number of amuses including a pannacotta of cauliflower and a soup of sweet potato. A harbinger of the creative combinations that await us. Beforehand, a beautifully prepared plate with granola of pumpkin, cake of black garlic, pumpkin seeds, cream of buratta, surrounded by pumpkin and orange sauce. Then, tranched tender diamond fillet with bordelaise sauce, parsnip mousseline and chanterelles. The host serves a nice tempranillo 2020, Rosario Vera, Rioja, Spain with this. Notable fact: no half glasses are served. If you want less wine in your glass, the other guests get a splash. Special. There is a special menu for theater-goers, tailored to the time the performance starts.
